Tropical Turkey Protein Bowl

Recipe: Tropical Turkey Protein Bowl

Main Ingredient: Turkey

Ingredients:

  • 2 turkey breasts (approx. 500g)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 cup quinoa
  • 1 cup of black beans
  • 1 cup mango cubed
  • 1 ripe avocado sliced
  • 1/4 cup of unsalted almonds
  • 2 tablespoons of fresh lime juice
  • Fresh coriander leaves

Cooking Instructions:

  1. Preheat your grill or griddle pan over medium heat.
  2. Rub the turkey breasts with 1 tablespoon of olive oil, salt, and pepper.
  3. Grill the turkey breasts for 7-8 minutes each side or until cooked through.
  4. While the turkey is cooking, cook the quinoa as per the package instructions.
  5. In a separate pan, warm the black beans adding salt to taste.
  6. Slice the cooked turkey breasts.
  7. In a large bowl, combine the grilled turkey, cooked quinoa, warmed black beans, cubed mango, sliced avocado, and almonds.
  8. Drizzle with the remaining olive oil, fresh lime juice, and garnish with fresh coriander leaves.

Plating:

Arrange a generous scoop of the protein-packed quinoa at the base of a large shallow bowl. Layer the warm black beans on top followed by the slices of succulent grilled turkey breast. Arrange the mango cubes and avocado slices around the turkey creating a vibrant color contrast. Sprinkle the top with chopped almonds for an added crunch. Finish the plate with a drizzle of lime juice, a drizzle of olive oil, and a scattering of fresh coriander leaves. The finished plate should showcase a balanced mix of colors and textures, resembling a picture-perfect tropical landscape.
