Sunflower Beef Tournedos
Ingredients:
- 600 grams of beef tenderloin
- 2 tablespoons of sunflower oil
- Salt and black pepper to taste
- 2 cloves of garlic, minced
- 100 grams of sunflower seeds
- 1 cup spinach leaves
- 100 grams of feta cheese cubes
- 1 tablespoon of balsamic reduction
Cooking Instructions:
- Preheat the oven to 400°F.
- Sprinkle salt and pepper over the beef tenderloin and rub them in with your fingers.
- Heat the sunflower oil in a skillet over medium heat and sauté the garlic until it turns golden brown.
- Add the beef tenderloin to the skillet and sear it on all sides until it develops a crust.
- Transfer the beef to an ovenproof dish and roast it in the oven for about 15 minutes, or until it reaches your desired level of doneness.
- While the beef is roasting, heat a pan over medium heat and toast the sunflower seeds until they turn a light gold.
- Once the beef is done, remove it from the oven and let it rest for about 10 minutes.
- Slice the beef into tournedos and serve it on a bed of spinach leaves, sprinkle with toasted sunflower seeds, and feta cheese cubes, and drizzle with the balsamic reduction.
