Spicy Lemon-Lime Beef Skewers

Spicy Lemon-Lime Beef Skewers

Ingredients:

  • 2lbs. of lean beef sirloin, cut into 1-inch chunks
  • 3 large bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces

For the Marinade:

  • Zest and juice of 2 lemons
  • Zest and juice of 2 limes
  • 2 tbsp of olive oil
  • 1 tbsp of red hot chili flakes
  • 2 cloves of garlic, minced
  • 1 tsp of black pepper
  • Salt to taste

Instructions:

  1. In a large mixing bowl, combine all the ingredients for the marinade.
  2. Add the beef chunks to the marinade and toss them well to ensure every piece is coated with the marinade. Set it aside to marinate for at least 1 hour, but preferably overnight in the refrigerator.
  3. Preheat your grill to medium-high heat, or your oven to 450 degrees Fahrenheit.
  4. Skew the marinated sirloin, peppers, and onions alternatively onto your skewers.
  5. Grill the skewers, turning them often, for about 10-12 minutes until the beef is cooked to your desired internal temperature, and the vegetables are slightly charred.
  6. Let the skewers rest for a few minutes before serving.

Plating:

The meal should be served directly on the skewers for a rustic and alluring appeal. Lay each skewer diagonally across a simple white rectangular plate for contrast. You might want to garnish the dish with a sprinkle of citrus zest and a pinch of additional chili flakes on top, adding vibrancy and hinting at the zesty, spicy flavors. On the side, you might have a small cup of extra marinade, acting as a dipping sauce. The dish should look colorful, healthy, and appetizing with the charred vegetables giving a grilled, smoky look to the plate.
