Spicy Lemon-Lime Beef Skewers
Ingredients:
- 2lbs. of lean beef sirloin, cut into 1-inch chunks
- 3 large bell peppers, cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces
For the Marinade:
- Zest and juice of 2 lemons
- Zest and juice of 2 limes
- 2 tbsp of olive oil
- 1 tbsp of red hot chili flakes
- 2 cloves of garlic, minced
- 1 tsp of black pepper
- Salt to taste
Instructions:
- In a large mixing bowl, combine all the ingredients for the marinade.
- Add the beef chunks to the marinade and toss them well to ensure every piece is coated with the marinade. Set it aside to marinate for at least 1 hour, but preferably overnight in the refrigerator.
- Preheat your grill to medium-high heat, or your oven to 450 degrees Fahrenheit.
- Skew the marinated sirloin, peppers, and onions alternatively onto your skewers.
- Grill the skewers, turning them often, for about 10-12 minutes until the beef is cooked to your desired internal temperature, and the vegetables are slightly charred.
- Let the skewers rest for a few minutes before serving.
