Spiced Lamb Protein Booster

Recipe Name: Spiced Lamb Protein Booster

Ingredients:

  • 500 grams of lean lamb, cut into chunks
  • 2 tablespoons of olive oil
  • 1 bell pepper, sliced
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of chili flakes
  • 1 cup of Greek yogurt
  • Juice of 1 lemon
  • 2 tablespoons of fresh mint, chopped
  • Salt and black pepper to taste
  • Handful of microgreens for garnish

Cooking Instructions:

  1. Heat one tablespoon of olive oil in a skillet over medium heat. Add the lamb chunks and cook until browned on all sides. Remove from the skillet and set aside.
  2. In the same skillet, add another tablespoon of olive oil, bell pepper, and garlic. Cook until the bell pepper is soft and the garlic is fragrant.
  3. Add the ground cumin, coriander, and chili flakes to the skillet. Stir well and cook for another minute.
  4. Return the lamb to the skillet and mix well with the spices. Cook for another 5-6 minutes until the lamb is fully cooked.
  5. In a bowl, mix the Greek yogurt, lemon juice, chopped mint, salt, and black pepper.
  6. Add the spiced lamb to the Greek yogurt mixture and mix well. Check for seasoning and adjust as per taste.
  7. Serve the spiced lamb topped with a handful of microgreens.
