Spiced Lamb And Lentil Protein Power Bowl
Ingredients:
- 500 grams lamb leg steak, fat trimmed
- 500 grams green lentils
- 1 red bell pepper
- 2 medium carrots
- 1 medium cucumber
- 2 tablespoons olive oil
- 2 teaspoons mixed herbs
- Salt and pepper to taste
- 4 tablespoons Greek yogurt
- 1/4 cup lemon juice
- 2 cloves garlic
Instructions:
- Preheat a grill on medium heat. While the grill is heating, season the lamb steaks with salt, pepper, and a teaspoon of mixed herbs. Grill the lamb for 6-8 minutes each side or until cooked to your liking. Leave it to rest for a few minutes before slicing into thin strips.
- Rinse the lentils thoroughly under cold water, then drain. Place them into a pot with 3 cups of water. Bring to a boil, then reduce to a simmer and cook for 20-25 minutes or until lentils are tender.
- While the lentils are cooking, cut the red bell pepper, carrots, and cucumber into thin strips. In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the vegetables and a teaspoon of mixed herbs, and sauté until they become tender.
- For the dressing, combine 4 tablespoons of Greek yogurt, lemon juice, 2 cloves of crushed garlic, remaining olive oil, and some pepper. Mix until smooth.
- Mix the cooked lentils and sautéed vegetables together, and then add the dressing. Stir until everything is well combined.
