Spice-Rubbed Lamb Kebabs With Protein Rich Quinoa Salad

Main Ingredients:

  • 1 kilogram lamb leg, boneless and cut into cubes
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • 1 cup cooked quinoa
  • 1/2 cup chickpeas
  • 1/2 cup edamame
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Fresh mint leaves for garnish

Cooking Instructions:

  1. Start by combining the cumin, coriander, turmeric, smoked paprika and salt then rub this mixture onto the lamb cubes. Allow them to marinate for a minimum of two hours or overnight for best flavor.
  2. While the lamb is marinating, prepare the quinoa salad. In a large bowl, mix together the cooked quinoa, chickpeas, edamame and diced red bell pepper.
  3. Whisk together olive oil, lemon juice, salt to taste and pour this over the quinoa salad. Mix well and refrigerate.
  4. Grill the marinated lamb cubes on skewers till they are cooked to your liking.
  5. Serve the grilled lamb skewers over quinoa salad and garnish with fresh mint leaves.
