Recipe: Sesame Crusted Lamb Lollipops with Sweet Potato Mash

Ingredients:
- Lamb Rack (8 ribs) – About 500 grams
- Sesame Seeds
- Olive oil
- Fresh rosemary
- Fresh garlic
- Salt and black pepper
- 200g Sweet potato
- 30g Butter
- Fresh parsley
Cooking Instructions:
- Preheat your oven at 180°C (350°F).
- Cut the lamb rack into individual ribs. Season with fresh ground black pepper, a pinch of salt, minced garlic, and finely chopped rosemary.
- Pour some sesame seeds in a plate and press each side of the lamb rib in the seeds until it’s well coated.
- Heat the olive oil in a skillet over medium-high heat. Add the lamb lollipops and cook, turning until all sides are browned, about 5 minutes.
- Transfer the skillet to the preheated oven and cook for approximately 15-20 min for medium-rare.
- While the lamb is in the oven, peel the sweet potatoes and cut them into small cubes. Boil until tender and then drain.
- Add butter, a pinch of salt and black pepper, and mash the sweet potatoes until smooth.
- Stir in the chopped parsley.

Plating:
Arrange two lamb lollipops atop a generous portion of the sweet potato mash on a simple white plate. The vibrant orange of the mash should contrast nicely with the golden-brown lamb lollipops.
