Main Ingredient

Beef (Sirloin Steak)

Ingredients

  • 1 lb sirloin steak (thinly sliced)
  • 1 cup cooked quinoa
  • 1 cup julienne carrots
  • 1 cup thinly sliced bell peppers (mixed colors)
  • 1 cup spinach leaves
  • 4 cloves of garlic (minced)
  • 2 tsp. light soy sauce
  • 1 tsp. olive oil
  • Salt and pepper to taste

For the dipping sauce:

  • 2 tbsp. low sodium soy sauce
  • 1 tbsp. rice vinegar
  • 1 tbsp. minced ginger
  • 1/2 tsp. red pepper flakes

Instructions:

  1. Firstly, season the thinly sliced sirloin steak with minced garlic, light soy sauce, and pepper. Let it marinade for 15 minutes.
  2. While the steak is marinating, prepare the veggies (carrots, bell peppers, and spinach) and cook the quinoa. Set these aside.
  3. Lay out a slice of steak and place a spoonful of cooked quinoa, followed by a layer of veggies on one end. Carefully roll up the steak tightly and secure it with a toothpick. Repeat with the remaining steak slices.
  4. Heat the olive oil in a pan over medium heat. Cook the beef rolls for about 2-3 minutes on each side, until browned and cooked to your liking.
  5. While the beef rolls are cooking, mix the ingredients for the dipping sauce in a small bowl.
  6. Serve the beef rolls hot with the dipping sauce on the side.

Plating:

Arrange the savory sirloin beef rolls on a clean, white plate to highlight the colors. A group of three or four rolls creates a pleasing, balanced look on the plate, with one roll cut in half to demonstrate the colorful interior. Spoon the dipping sauce into a small, shallow dish and place it on the side of the plate. Garnish with a sprinkling of sesame seeds and a small mint leaf, if desired. The plate should look vibrant, enticing, and as deliciously savory and protein-packed as it tastes.
