Lemon-Ginger Glazed Chicken Quinoa Salad

Main Ingredient:

Chicken

Ingredients:

  1. 2 chicken breasts
  2. 1 cup of quinoa
  3. 1 red bell pepper, chopped
  4. 1 cup of chopped cucumber
  5. 1 cup of cherry tomatoes, sliced in half
  6. 1/2 cup of chopped red onion

Ginger-Lemon Glaze:

  • Juice of 1 lemon
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil

Cooking Instructions:

  1. Marinate chicken breasts in the lemon-ginger glaze for at least 30 minutes.
  2. Preheat grill or skillet over medium heat, add oil, and cook chicken until done(no longer pink inside), about 6-7 minutes each side. Once done, let it rest for a few minutes then slice into strips.
  3. While the chicken is cooking, prepare the quinoa as per the packet instructions. Once cooked, fluff the quinoa with a fork.
  4. In a large bowl, combine the cooked quinoa, chopped bell pepper, cucumber, cherry tomatoes, and onion.
  5. Top the salad with the grilled lemon-ginger chicken strips and toss lightly to combine.

Plating:
