Lamb-Stuffed Bell Pepper Towers

Lamb-Stuffed Bell Pepper Towers

Ingredients:

  • 6 large bell peppers (mix of colors)
  • 1 pound of ground lamb
  • 1 large onion, chopped
  • 2 cups of spinach
  • 1 cup of cauliflower rice
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh rosemary, chopped
  • 1 tablespoon of fresh thyme, chopped
  • Salt and pepper to taste
  • 1/2 cup of feta cheese
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Trim the tops of the bell peppers and remove the seeds. Set aside.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until fragrant.
  4. Add the ground lamb to the skillet and season with salt and pepper. Cook until browned.
  5. Stir in the cauliflower rice and spinach into the lamb mixture. Cook for an additional 2-3 minutes, or until the spinach is wilted.
  6. Remove from heat and stir in the feta cheese, rosemary, and thyme.
  7. Spoon the lamb mixture into the bell peppers, filling them completely.
  8. Place the stuffed bell peppers into a baking dish and bake for 25-30 minutes, or until the peppers are tender.
  9. Garnish with fresh parsley before serving.

Plating:

Place a Lamb-Stuffed Bell Pepper in the middle of the plate standing tall. Sprinkle some fresh chopped parsley all over the plate. The colors should be vibrant with the bell pepper offering a radiant contrast to the golden-brown ground lamb mixture peeking out from the top. Serve it with a side of mixed greens lightly dressed with lemon vinaigrette. The presentation should be simple yet captivating, making the dish not just a treat for the palate but also for the eyes.
