Lamb Protein Symphony
Main Ingredient: Lamb
Ingredients:
- 800 grams of lean lamb mince
- 150 grams of quinoa
- 4 cloves of garlic, minced
- 2 red bell peppers, finely chopped
- 2 tablespoons of olive oil
- 2 teaspoons of cumin
- 2 teaspoons of coriander
- 1 teaspoon of paprika
- 1 teaspoon of thyme
- Salt and black pepper to taste
- 4 large lettuce leaves for garnish, optional
- Fresh parsley for garnish, optional
Instructions:
- In a large bowl, mix lamb mince, garlic, red bell peppers, cumin, coriander, paprika, thyme, salt, and black pepper together.
- Heat a wide pan on medium heat and add olive oil. Once the oil is warm, add the seasoned lamb mince and cook for about 15 minutes or until well done and crispy.
- While the lamb is cooking, prepare the quinoa according to the packet instructions and set aside.
- Once the lamb and quinoa are cooked, combine them in a large bowl and mix well.

Lay a large lettuce leaf on each serving plate. Scoop the lamb and quinoa mixture onto the lettuce leaf. You can also mould the mixture into a round shape using a ramekin. Garnish with fresh parsley for a pop of color and an extra hint of flavour. The result is a visually pleasing plate with a perfect balance of colors: the green from the lettuce and parsley, the red hues from the bell peppers, and the brown of the cooked lamb and quinoa. The meal should look as appealing as it is nutritious, inviting you to dig in.
