Honey Sriracha Turkey Power Bowl
Ingredients:
For the Turkey:
- 1lb lean ground turkey
- 2 tbsp honey
- 2 tbsp Sriracha sauce
- 1 tbsp soy sauce
- Salt and pepper to taste
For the Bowl:
- 1 cup quinoa
- 2 cups water
- 2 cups shredded cabbage
- 1 medium carrot, julienned
- 1 medium bell pepper, thinly sliced
- 1 avocado, sliced
- A handful of fresh cilantro leaves
For the Dressing:
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 garlic clove, minced
- Salt and pepper to taste
Cooking Instructions:
- Start by cooking the quinoa. Bring 2 cups of water to a boil in a medium-sized pot. Add the quinoa, cover and simmer for 15-20 minutes until all the water is absorbed. Set it aside.
- While the quinoa cooks, brown the ground turkey in a large skillet over medium heat. Season it with salt and pepper.
- In a separate bowl, combine the honey, Sriracha sauce, and soy sauce. Pour this mixture over the cooked turkey and stir well. Let it simmer for another 5 minutes to allow the turkey to soak in the flavors.
- For the dressing, whisk together lime juice, olive oil, soy sauce, minced garlic, salt, and pepper in a small bowl.
- In your bowl, start with a base of quinoa, add your cooked turkey, cabbage, carrots, bell pepper, and avocado slices. Drizzle the dressing over the top and garnish with cilantro leaves.
