High-Protein Lamb Sliders with Quinoa Salad

Recipe Name: High-Protein Lamb Sliders with Quinoa Salad

Main Ingredient: Lamb

Ingredients:

For the Sliders:

  • 1 lb lean ground lamb
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Reduced-fat feta cheese, crumbled
  • Whole grain slider buns

For the Quinoa Salad:

  • 1 cup cooked quinoa
  • ½ cup chopped cucumbers
  • ½ cup chopped tomatoes
  • ¼ cup chopped fresh parsley
  • Juice of half a lemon
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Cooking Instructions:

  1. In a large bowl, mix the ground lamb, egg, garlic, cumin, salt and pepper. Form into small patties sized to fit your slider buns.
  2. Heat a grill or grill pan over medium heat. Cook the patties for 4-5 minutes per side or until cooked through. Top with crumbled feta in the last minute of cooking to allow it to slightly melt.
  3. While the sliders are cooking, prepare the quinoa salad. In a bowl, combine the cooked quinoa, cucumbers, tomatoes, parsley, lemon juice, olive oil, salt and pepper. Mix well to combine.
  4. To assemble, place a cooked patty on the bottom half of a slider bun. Add a generous helping of the quinoa salad on top of the feta, then place the top of the bun on the salad.

Plating:

Place two sliders at the center of a large plate, allowing some of the quinoa salad to spill out of the sandwiches for a rustic look. On one side of the sliders, add a small mound of extra quinoa salad. Garnish the plate with a few sprigs of fresh parsley for a vibrant contrast. The final dish is a balance of hearty and fresh, and it bursts with color and flavor to excite both the eyes and the palate.
