Herby Lamb Kofta Kebabs

Recipe Name: Herby Lamb Kofta Kebabs

Ingredients:

  • 500 g lamb mince
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh cilantro, finely chopped
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp cayenne pepper
  • Salt and black pepper to taste
  • Olive oil for grilling
  • 8 skewers

Cooking Instructions:

  1. In a large bowl, mix the lamb mince, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt and pepper. Make sure the ingredients are well combined.
  2. Divide the mixture into 8 equal parts. With damp hands, mold each portion onto the tip of a skewer, making a sausage-like shape.
  3. Preheat your grill or grill pan to medium-high heat and brush it with some olive oil.
  4. Put the kebabs on the grill and cook for approximately 10 minutes, turning occasionally to brown all sides. Ensure the meat is cooked throughout.

  • Calories: 350 per serving

Plating:

Lay a couple of kebabs on the plate diagonally, accompanied by a drizzle of low-carb sauce of choice, or a squeeze of fresh lemon for a splash of color and taste. Garnish the plate with a handful of fresh parsley and sprigs of cilantro to bring out the green tones and compliment the main part of the dish. A side salad or some steamed vegetables would compliment the color palette and provide a nutritional balance to the meal. The overall look should be vibrant and inviting, with the beautifully grilled kofta kebabs as the star of the plate.
