Golden Turkey Protein Parcel

Recipe: Golden Turkey Protein Parcel

Ingredients:

  • Main Ingredient: 500 grams of turkey breast
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 large zucchini, grated
  • 1/2 cup of diced bell pepper
  • Salt and black pepper to taste
  • 1 tablespoon of dried herbs (thyme, rosemary or oregano)
  • 1 tablespoon of mustard
  • 1/2 cup of grated mature cheddar cheese
  • 2 eggs
  • 50 grams of ground almonds (almond flour)

  • Protein: 40 grams
  • Fat: 15 grams
  • Carbs: 10 grams

Cooking Instructions:

  1. Preheat the oven to 200 degrees centigrade
  2. Heat 1 tablespoon of olive oil in a pan, add the finely chopped onion, garlic, grated zucchini and diced bell pepper. Sauté until the onions are translucent and the zucchini has released its moisture.
  3. Cut the turkey breast into small pieces and blend in a food processor until it becomes a thick paste. Add this to the vegetable mixture.
  4. Add in the mustard, the herbs, salt and pepper, and mix together. Allow this mixture to cool down a bit.
  5. Once cooled, add in the two eggs, grated cheese, and ground almonds. Mix until it binds together.
  6. Press the mixture into a loaf tin that has been greased with the remaining olive oil.
  7. Bake for about 30-40 minutes or until golden and crispy. Check with a skewer, if it comes out clean, the turkey parcel is done.
  8. Let it cool for 10 minutes before slicing.

Plating:

Lay a bed of fresh arugula on your plate, top with a generous slice of the Golden Turkey Protein Parcel. Garnish with a sprig of rosemary or thyme for an elegant touch. The parcel should be golden in colour with a crispy looking crust. The contrast of the green arugula against the golden parcel should create an inviting, mouth-watering meal packed with protein punch.
