Golden Sesame Chicken Quinoa Bowl

Recipe: Golden Sesame Chicken Quinoa Bowl

Main ingredient: Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts (500g)
  • 1 cup of cooked quinoa (185g)
  • 2 tablespoons of olive oil (27g)
  • 1 cup of broccoli florets (91g)
  • 2 carrots, chopped (122g)
  • 3 tablespoons of sesame seeds (27g)
  • Salt and pepper to taste
  • A handful of fresh coriander leaves for garnishing

Cooking instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Brush the chicken breasts with one tablespoon of olive oil, season with salt and pepper, then transfer to a baking sheet.
  3. Roast the chicken in the oven for about 20-25 minutes, or until the chicken is cooked through.
  4. While the chicken is roasting, heat the remaining olive oil in a skillet.
  5. Stir in the broccoli and carrots, cooking until they are tender.
  6. Slice the roasted chicken and add it to the skillet. Toss everything together and allow the chicken to get a little crispy on the edges.
  7. Mix in the cooked quinoa and sesame seeds, ensuring everything is well combined.
