Glazed Turkey Quinoa Power Bowl

Ingredients:
- 400 grams of skinless, boneless turkey breasts
- 1 cup of cooked quinoa
- 2 cups of chopped kale
- 1 cup of shredded carrots
- 1 cup of broccoli florets
- 1 tablespoon of olive oil
- Salt and pepper to taste
For the glaze:
- 1/4 cup of low-sodium soy sauce
- 1 tablespoon of honey
- 1 tablespoon of minced garlic
- 1 teaspoon of minced ginger
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Place turkey breasts onto a baking sheet and season with salt and pepper.
- Mix the soy sauce, honey, garlic, and ginger together in a bowl to make the glaze.
- Brush half of the glaze onto the turkey breasts.
- Bake in the preheated oven for 20 minutes.
- After 20 minutes, brush the remaining glaze onto the turkey and bake for another 15-20 minutes, or until internal temperature reaches 165 degrees F (74 degrees C).
- While turkey is baking, heat oil in a large skillet over medium heat. Add broccoli, carrots, and kale. Stir-fry until the veggies are tender.
- Fluff the cooked quinoa with a fork and divide it among serving bowls.
- Slice the cooked turkey and place it on top of the quinoa.
- Add the stir-fried veggies to the bowl, and the dish is ready to serve.
