Glazed Turkey Quinoa Power Bowl

Glazed Turkey Quinoa Power Bowl

Main Ingredient:

Turkey

Ingredients:

  • 400 grams of skinless, boneless turkey breasts
  • 1 cup of cooked quinoa
  • 2 cups of chopped kale
  • 1 cup of shredded carrots
  • 1 cup of broccoli florets
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

For the glaze:

  • 1/4 cup of low-sodium soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of minced garlic
  • 1 teaspoon of minced ginger

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place turkey breasts onto a baking sheet and season with salt and pepper.
  3. Mix the soy sauce, honey, garlic, and ginger together in a bowl to make the glaze.
  4. Brush half of the glaze onto the turkey breasts.
  5. Bake in the preheated oven for 20 minutes.
  6. After 20 minutes, brush the remaining glaze onto the turkey and bake for another 15-20 minutes, or until internal temperature reaches 165 degrees F (74 degrees C).
  7. While turkey is baking, heat oil in a large skillet over medium heat. Add broccoli, carrots, and kale. Stir-fry until the veggies are tender.
  8. Fluff the cooked quinoa with a fork and divide it among serving bowls.
  9. Slice the cooked turkey and place it on top of the quinoa.
  10. Add the stir-fried veggies to the bowl, and the dish is ready to serve.

Plating:

Start by filling half of a clean, white bowl with the fluffy quinoa and place the glazed turkey slices neatly on the other half. Surround the turkey with vivid green of stir-fried broccoli, kale, and bright orange shredded carrots. The blend of colours will create an appealing visual impact, emphasizing the health benefits of the meal. For a finishing touch, sprinkle a pinch of black and white sesame seeds over the turkey and the quinoa.
