Deluxe Stuffed Beef Tenderloin

Ingredients

  • 2 lb beef tenderloin
  • 1 cup of spinach
  • 1/2 cup of feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tbsp of fresh rosemary
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Cooking Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the beef tenderloin lengthwise, but not all the way through, and open it like a book.
  3. On one side of the beef, spread the spinach, feta cheese, and sun-dried tomatoes evenly. Sprinkle the rosemary on top.
  4. Roll the beef back up securely, making sure the filling does not spill out.
  5. Secure the roll using cooking twine; season the outside with salt, pepper, and a light brushing of olive oil.
  6. Roast in the oven for about 25-30 minutes for medium-rare, or until it reaches your desired level of doneness. Adjust cooking times for well-done or rare meat.
  7. Let the meat rest for at least 10 minutes before removing the twine and slicing it into medallions.
