Curried Beef & Quinoa Stuffed Red Peppers

Recipe: Curried Beef & Quinoa Stuffed Red Peppers

Main Ingredient: Beef (Minced)

Ingredients:

  • 500 grams minced beef (lean)
  • 1 cup cooked quinoa
  • 4 large red bell peppers
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon mild curry powder
  • 1 cup frozen peas
  • 1 tablespoon minced fresh parsley
  • Salt and pepper to taste

Cooking instructions:

  1. Preheat the oven to 200 degrees celsius.
  2. Heat the olive oil in a pan over medium heat and add onions, garlic and curry powder. Sauté until the onions are tender, about 5 mins.
  3. Add the minced beef, breaking it up with a spoon, until browned.
  4. Stir in the quinoa, peas, parsley, salt, and pepper.
  5. Cut the tops off the red peppers and remove the seeds. Fill each pepper with the beef and quinoa mixture.
  6. Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the filling is hot.

  • Fat: 15g
  • Carbs: 20g

“Plating:”

Place a stuffed red pepper in the middle of a white serving plate. Drizzle a little spoonful of remaining sauce around the base of the pepper. Garnish the dish with a sprinkling of parsley on top of the pepper for color contrast. There should be a visual burst of warm red from the pepper, with tantalizing glimpses of the hearty, golden-brown beef and quinoa mixture peeking from within.
