Cowboy’s High-Protein Beef Stew

Ingredients:

  • 800 grams of lean beef cut into cubes
  • 2 tablespoons of olive oil
  • 2 medium onions, chopped
  • 4 cloves of garlic, minced
  • 1 bunch of celery, chopped
  • 500 grams of carrots, chopped
  • 3 liters of low-sodium beef broth
  • 2 tablespoons of Worcestershire sauce
  • Freshly ground black pepper and sea salt to taste
  • Fresh thyme and parsley for garnishing

Cooking Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides. Remove from the pot and set aside.
  2. In the same pot, sauté the onions until they turn translucent. Add the minced garlic and cook for another minute.
  3. Add the carrots and celery to the pot and stir well. Cook until they begin to soften.
  4. Return the beef to the pot and add the beef broth and Worcestershire sauce. Season with salt and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 2 hours, or until the beef is tender.
  6. Serve hot, garnished with fresh thyme and parsley.

Plating:

Serve this hearty stew in a deep, white bowl to highlight the beautiful colors of the beef and vegetables. Make sure to portion the beef and vegetables evenly amongst the servings. Drizzle a bit of the savory broth over the top, allowing it to pool slightly at the bottom. It should be piping hot, with steam rising off the top for a visually appealing, and mouth-watering effect. Sprinkle freshly chopped parsley and thyme on top, adding a pop of bright green color and extra freshness right before serving. A couple of whole grain crackers on the side for fare are optional, keeping mindful of the carb count but also giving the opportunity to soak in the remaining broth.
