Moroccan Minted Lamb Skewers

Moroccan Minted Lamb Skewers

Main Ingredient: Lamb

Ingredients:

  • 600g lean lamb leg, cut into cubes
  • 1 cup of plain Greek yogurt
  • 2 tablespoons of fresh mint, finely chopped
  • 1 tablespoon of lemon zest
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • Salt and black pepper to taste
  • Metal or wooden skewers

Instructions:

  1. In a bowl, mix together Greek yogurt, mint, lemon zest, lemon juice, minced garlic, ground cumin, ground coriander, salt and black pepper.
  2. Add the diced lamb into the bowl and mix until all the pieces are well-coated. Marinate for at least two hours.
  3. Thread the lamb onto skewers. If you’re using wooden skewers, make sure to soak them in water for at least 30 minutes prior to prevent burning.
  4. Preheat your grill or broiler on medium-high heat. Cook the skewers for 3-4 minutes each side, or until they reach your desired level of doneness.
  5. Let the skewers rest for a few minutes before serving.

Plating:

Place two or three skewers diagonally across a warm plate. Drizzle any remaining sauce from the marinade or cooking process over the top. Garnish with fresh mint leaves and a wedge of lemon on the side. The finished dish should evoke the vibrant and fresh flavors of Moroccan cuisine, underlined by the succulent, protein-rich lamb.
