Protein Powerhouse Beef Stir-fry

Protein Powerhouse Beef Stir-fry

Ingredients:

  • 500g lean beef strips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 200g broccoli florets
  • 100g sugar snap peas
  • 50g cashew nuts
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large wok or frying pan over medium-high heat.
  2. Add the beef strips and stir-fry for about 3-4 minutes until browned. Remove from the pan and set aside.
  3. In the same pan, add the garlic and ginger and stir-fry for about 1 minute until fragrant.
  4. Add the red and green bell peppers, broccoli, and sugar snap peas. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
  5. Return the beef to the pan and add the cashew nuts.
  6. In a small bowl, combine the soy sauce, oyster sauce, and cornstarch mixture. Pour this over the beef and vegetables and stir well to combine.
  7. Season with salt and pepper to taste and cook for another 2-3 minutes until the sauce has thickened.
  8. Serve hot.

Plating:
