Edamame Chickpea Vegan Power Bowl

Recipe: Edamame Chickpea Vegan Power Bowl

Ingredients:

  • 2 cups frozen shelled edamame
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 cup cooked quinoa
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1/4 cup chia seeds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Lemon-tahini dressing: 1/4 cup tahini, juice of 1 lemon, 2 tablespoons olive oil, 1 tablespoon maple syrup, and salt and pepper to taste

Instructions:

  1. Bring a pot of salted water to a boil. Add the edamame and cook until tender, about 5 minutes. Drain and rinse with cold water to cool.
  2. In a large bowl, combine edamame, chickpeas, quinoa, red bell pepper, cucumber, and chia seeds. Drizzle with olive oil and add salt and pepper to taste.
  3. For the dressing, combine tahini, lemon juice, olive oil, and maple syrup in a jar. Shake well and season with salt and pepper.
  4. Drizzle the dressing over the edamame and chickpea mixture and toss well to combine.

Plating:
