Recipe Name: Lavish Lamb Curry in Protein-Rich Almond Sauce

Main Ingredient: Lamb

Ingredients:

  • 500g lean, lamb tenderloin, cubed
  • 1 medium onion, finely chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon fresh ginger, finely chopped
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chilli powder (optional)
  • 1 cup unsweetened almond milk
  • 1/4 cup almond butter
  • 1/2 cup Greek yogurt
  • Salt to taste
  • Fresh coriander for garnish

Cooking Instructions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onions and cook until golden, about 5 minutes.
  2. Add the chopped garlic and ginger, stirring until they become aromatic.
  3. Add the lamb to the pan, stirring well to ensure the onions, garlic, and ginger coat the meat. Cook until lamb is evenly browned on all sides.
  4. Sprinkle in the curry powder, turmeric, chilli powder (if using), and salt, cooking for another 5 minutes.
  5. Pour over the almond milk and almond butter, stirring until the meat is well coated in the sauce. Cover and simmer for 20-25 minutes until lamb is tender.
  6. Take off the heat and stir through the Greek yogurt, ensuring everything is well mixed.
  7. Serve the lavish lamb curry warm with fresh coriander sprinkled on top.
