Recipe: Tropical Turkey Protein Bowl
Main Ingredient: Turkey
Ingredients:
- 2 turkey breasts (approx. 500g)
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup quinoa
- 1 cup of black beans
- 1 cup mango cubed
- 1 ripe avocado sliced
- 1/4 cup of unsalted almonds
- 2 tablespoons of fresh lime juice
- Fresh coriander leaves
Cooking Instructions:
- Preheat your grill or griddle pan over medium heat.
- Rub the turkey breasts with 1 tablespoon of olive oil, salt, and pepper.
- Grill the turkey breasts for 7-8 minutes each side or until cooked through.
- While the turkey is cooking, cook the quinoa as per the package instructions.
- In a separate pan, warm the black beans adding salt to taste.
- Slice the cooked turkey breasts.
- In a large bowl, combine the grilled turkey, cooked quinoa, warmed black beans, cubed mango, sliced avocado, and almonds.
- Drizzle with the remaining olive oil, fresh lime juice, and garnish with fresh coriander leaves.
