Beefed Up Stuffed Bell Peppers

Ingredients:
- 4 large bell peppers
- 2 cups of lean ground beef
- 1 cup of chopped onions
- 1 cup of chopped tomatoes
- 2 cloves of garlic, minced
- 1/2 cup of grated low fat cheddar cheese
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375 degrees F.
- Heat the olive oil in a pan over medium heat. Add in the chopped onions and minced garlic, cooking until the onions are translucent.
- Add the ground beef to the pan and cook until it’s browned. Season with salt and pepper.
- Add the chopped tomatoes to the pan and cook for an additional 5 minutes or until the tomatoes are soft.
- Cut off the top of the bell peppers and remove the seeds.
- Evenly distribute the ground beef mixture among the four bell peppers.
- Place the peppers standing upright in a baking tray. Sprinkle the grated cheese over the tops of the peppers.
- Put the baking tray in the preheated oven and bake for 20 minutes, or until the bell peppers are soft and the cheese is golden and bubbly.

Place the stuffed bell pepper in the center of an off-white round plate. If there is any cheese that has overflowed onto the baking tray, make sure not to waste it. The meal is ideally served hot, as the melted cheese on top creates a beautiful golden layer over the vibrant bell pepper. One or two peppers should dominate the plate, with the stuffing clearly visible for a visual feast, which creates anticipation for the actual feast!
