Ingredients:
- 1 lb ground turkey (lean)
- 1/2 cup quinoa (cooked)
- 1 tablespoon olive oil
- 1 cup fresh spinach
- 1/2 cup cherry tomatoes (halved)
- 1 medium onion (chopped)
- 2 cloves of garlic (minced)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons of powdered parmesan cheese
- Fresh basil leaves for garnish
Instructions:
- In a large skillet, heat oil over medium-high heat.
- Add the onion and garlic and sauté until they become translucent.
- Add ground turkey to the skillet and cook until it’s brown and no longer pink.
- Season with Italian seasoning, salt, and pepper, and stir.
- Add cooked quinoa, spinach, and cherry tomatoes into the skillet, and cook for 2-3 minutes or until the spinach has wilted.
- Sprinkle with parmesan cheese and stir the mixture well.
- Serve hot, garnish with fresh basil leaves, more parmesan if desired.
