Ingredients:
- 4 skinless boneless chicken breasts, approximately 150 grams each
- 2 cups of fresh spinach
- 1 cup of ricotta cheese
- 1/2 cup of grated Parmesan
- 1/2 cup of sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and Pepper to taste
- 2 tablespoons of Olive oil
- 4 wooden skewers, soaked in water

Cooking Instructions:
- Flatten chicken breasts using a mallet until they’re about 1/2 inch thick. Season with salt and pepper.
- In a bowl, mix spinach, ricotta cheese, Parmesan, sun-dried tomatoes, and garlic. Spread this filling evenly over each chicken breast.
- Roll chicken breasts up tightly and secure with wooden skewers. Preheat the grill or oven to 200°C.
- Brush chicken roll-ups with olive oil and grill for about 20 minutes or until chicken is cooked through.
- Allow the protein roll-ups to rest for 5 minutes before slicing.
Plating:
Carefully remove the skewers from the chicken roll-ups before slicing them into 1-inch thick rounds. Lay these spiraled pieces artistically on a clean, white plate to showcase the colours of the filling. Drizzle any additional fluids from the baking over the slices for extra color and flavor. Garnish with a sprinkle of additional grated Parmesan and a minimalistic sprig of fresh herbs, such as rosemary or parsley, for an elegant and appetizing presentation.
