Lamb-Feta Powerballs

Lamb-Feta Powerballs

Ingredients:

  • 500g lean lamb minced
  • 100g crumbled feta cheese
  • 10g chopped fresh mint
  • 10g chopped fresh coriander
  • 30g whole grain breadcrumbs
  • 1 large egg
  • 10g crushed garlic
  • Salt and pepper to taste
  • Olive oil for cooking

Cooking Instructions:

  1. In a large bowl, mix together the minced lamb, crumbled feta, chopped mint and coriander, breadcrumbs, egg, crushed garlic, and plenty of salt and pepper.
  2. Using your hands, form this mixture into small balls about the size of a golf ball.
  3. Heat a little olive oil in a large non-stick frying pan. Add the balls and cook for about 10-12 minutes on medium-high, turning frequently, until they are browned all over and cooked through.

Plating:

Arrange two Lamb-Feta Powerballs on one side of a round white plate along with a leafy green salad to contrast with the hearty meatballs. Drizzle with some tzatziki sauce, and add a lemon wedge for a pop of color. Sprinkle a little more feta and chopped herbs on top of the powerballs for color and to reinforce the flavors within. The resulting dish should present a vibrant and well-balanced blend of colors – green from salad and herbs, white from feta and tzatziki sauce, and brown from the powerballs, which indicates a well-rounded and high protein meal.
